
Detox. That is the word that comes to mind when I enter January. I always aspire to be one of those people who stays in shape over the holidays, but more often than not, I succumb to overeating and sitting on the couch watching movies like “Home Alone” and “A Christmas Story.” Of course I love every minute of it, but the aftermath is full of self loathing (why oh why did I eat 2 pieces of pie WITH ice cream for BREAKFAST??). I’m not partial to New Year’s resolutions (although I did make a big professionally-related one for 2012), but when January comes around, I do enjoy clean(er) eating. Winter fruits and veggies are some of my favorites. Grapefruit in particular. Nature’s candy in its finest form.
This salad is probably the easiest thing you will ever make. Just 3 ingredients. Super simple and super duper delicious. Why mess with something when it’s already so good on its own? I used lime in this particular recipe, but mint would also be yummy. Mumma didn’t have any mint in her fridge this past weekend, so limes made it into the post! Have it for breakfast, for a snack, or a healthy dessert. Pairing it with some Greek yogurt would add a nice tangy contrast to the sweet of the grapefruit and honey as well. Versatility at its finest. My apologies for my dangerous-looking knife skills…I think it’s the size of the knife that makes it look that much more precarious!

Grapefruit Salad with Honey Dressing
Adapted from Bobby Flay’s Grapefruit Salad
Ingredients
1 ruby red grapefruit
1 Tablespoon honey
Zest of half a lime
Directions
Take a knife and cut away the peel from the grapefruit. Over a bowl, carefully cut inside each segment of the fruit and remove the flesh. a fair amount of juice should fall into the bowl as you are cutting the fruit. Whisk the honey into the juice. Place the grapefruit onto a plate or bowl and drizzle with the dressing. Then zest the lime onto the grapefruit. Try not to devour it…it’s addicting!
